If denaturation takes place by cooking, that fat is then free too. It is still a work in process, as the Harvard team are yet to reveal any percentages but it is considered that the difference in calorific content between raw and cooked fats is less significant than in protein or carbohydrates, but not altogether unimportant; so watch this space.
